From One Chocolate Lover To Another, My Favorite Chocolate Dessert Recipes

I freely admit to my love of chocolate, but I’m very picky about how I like that chocolate, especially in recipes. Not everyone agrees with me! I must have walnuts in my brownies and I like cake-like rather than fudgy, for example, but I do think you will appreciate many of these tested recipes which I have made many times over the years.

The one thing all these desserts have in common is the addition of rich chocolate flavor as the main ingredient. Do not only read, gaze and dream- bake and eat!

The Velvety Richness of Real Chocolate

Rich dark chocolate cake and fudge icing, easy brownies full of cocoa flavor and walnuts, Auntie Mary cookies with melting chocolate filling, and a cream cheesecake with sweet chocolate flavor… delve in and indulge.

My kids loved to lick the spoon, …and the bowl … but the best part is the final result: cake with the buttercream frosting, or the delicate “Auntie Mary’s” with a hot cup of Christmas tea, or just baked brownies cut in generous squares.

Now you can enjoy these recipes with your family.

The Good News about Chocolate

The good news is that it is healthy for you. Of course that news is tempered by how much and what kind of fat you mix with it or the amounts of sugar you ingest, but indulging in this favorite flavor can be good for your health.

Tips:

  • Dark is better
  • High Cacao percentage is healthier
  • High levels of flavonals

Health Benefits of Cacao

Chocolate Dessert Tips

Don’t ever burn chocolate… not even a hint of it. That is why melting chocolate calls for a double boiler. Basically that is cooking the pan of the chocolate over a pan of hot water, just to melt the chocolate.

Any chocolate chips can work, but better quality chocolate means better tasting final product.

Double Boiler – To Melt the Chocolate Perfectly, A Double Boiler

The number one thing to remember when cooking or baking with chocolate is to never, I mean never, let it burn. Even allowing it to melt at too high a temperature can prove harmful to the flavor.

If you care enough to buy high quality chocolate, then it is more than worthwhile to have a double boiler in your kitchen. The bottom pot hold water which is heated directly from the burner, while the upper pot holds the delicate ingredient which is desired to bring to melting temperature. This help the squares to turn to silky liquid form without danger of burning.

  • 1 cup confectioners' sugar
  • ⅓ cup granulated white sugar
  • 1 teaspoon sea salt

  • 1 teaspoon pure vanilla extract
  • ½ vanilla bean
  • 1 egg
  • 2½ cups all purpose flour
Chocolate Dough:
  • 1 cup unsalted butter or 2 sticks
  • 1 cup confectioners' sugar
  • ½ cup granulated white sugar
  • 1 teaspoon sea salt
  • 1 teaspoon pure vanilla extract
  • ½ vanilla bean
  • 1 egg
  • 2 cups all purpose flour
  • ¼ cup black onyx cocoa powder
  • ¼ cup natural cocoa powder
  • 1 Tablespoon instant coffee
  • 1 teaspoon black pepper freshly ground fine

Method

Instructions
  1. :: Make the strawberry dough by placing the butter, sugars, salt, strawberry powder, and sumac in the bowl of a standing mixer fitted with the paddle attachment. Cream the butter and sugar until it is light and fluffy, about three minutes on medium. Add the vanilla extract and split the vanilla bean lengthwise and scrape out the seeds into the batter. Add the egg and beat to incorporate.
  2. :: Add the flour in three portions, beating to incorporate between additions, scraping down the sides with a large spatula. Once the flour is blended in, divide the dough in half and pat the dough down into a 6 x 6 x 1/2 inch square. Wrap tightly with plastic wrap and refrigerate until firm (about 20 to 30 minutes). Repeat with the second half of the dough.
  3. :: Make the chocolate dough by placing the butter, sugars, and salt in the same bowl (don't bother cleaning it) of the standing mixer fitted with the paddle attachment. Cream the butter and sugar until it is light and fluffy, about three minutes on medium. Add the vanilla extract and split the vanilla bean lengthwise and scrape out the seeds into the batter. Add the egg and beat to incorporate.
  4. :: Place the flour, cocoa powders, and instant coffee in a small bowl stir vigorously with a balloon whisk until well blended. Add these dry ingredients in three portions, beating to incorporate between additions, scraping down the sides with a large spatula. Once the flour is blended in, divide the dough in half and pat the dough down into a 6 x 6 x 1/2 inch square. Wrap tightly with plastic wrap and refrigerate (about 20 to 30 minutes). Repeat with the second half of the dough.
  5. :: Take the doughs out of the refrigerator. Brush the top of one of the strawberry dough 6 x 6 squares with water completely. Place one of the chocolate dough squares on top of it, and press down firmly to adhere the dough. Brush the top of this chocolate dough with water and place the remaining strawberry dough square on top of that, pressing down firmly. Finally brush the top of this strawberry square with water and place the remaining chocolate dough on top of that, pressing down firmly. You should have a 2 inch thick stack of 6 x 6 square dough, alternating in layers. Wrap with plastic wrap and place back in the refrigerator for 20 to 30 minutes until firm.
  6. :: Once the dough has firmed up, trim the edges of the square to make a completely square piece of dough. Set the trimming aside for marbled zebra cookies (instructions to follow). Cut a 1/2 inch strip from the square. Place one strip flat, and then brush it top of it with water. Cut another 1/2 inch strip from the square and rotate the strip 180 degrees so it alternates with the bottom strip. Place on the strip brushed with water and press firmly down. Wrap with plastic wrap. Repeat with the remaining cookie dough. Chill until firm (another 20 to 30 minutes).
  7. :: To make marbled zebra cookies, brush the top of one trimming with water and place another trimming on top, alternating dough strips. Repeat until all the trimmings are placed on each other. Flatten and twist the trimmings together, turning clockwise with one hand, while counterclockwise with the other. Roll out the dough to a 12 inch length, and fold over once. Form the dough into a thick 1 1/2 inch roll pressing firmly down to make sure the different doughs stick together. Wrap with plastic wrap and chill until firm (another 20 to 30 minutes).
  8. :: While the dough is chilling, preheat the oven to 350˚F. Line two baking sheets with silpats or parchment paper. Once the dough has firmed up, slice the dough into 1/2" thick cookies and place on the baking sheet, about an inch apart. Bake in the oven for 11 to 13 minutes, or until the edges of the cookies start to brown ever so slightly. Cool on the sheet for ten minutes before moving them to a wire cooling rack.

What are blintzes, you ask? The answer is here, along with more than one recipe for crepes that are filled with a ricotta-cottage cheese filling and topped with a warm blueberry sauce. It doesn’t need to stop there, as you will find out if you take the time.
Otherwise, go straight to the recipe, print it out and get cooking!

My Favorite Brunch Dish is Blueberry Blintzes

Blintzes For Breakfast, Lunch, And Dinner

Delicious Blueberry blintzes made with paper thin crepes and a dollop of cream.sBlintzes were one of the first recipes I learned to make as a young wife and new mother. I had opened up a bank account, and banks in those days often offered gifts to new customers. In this case, it was a cookbook, and it was the very first cookbook of my own.

I made a number of recipes from that old recipe collection that stayed in my repertoire and Blintzes turned out to be one of the family’s all time favorites. I fixed them for breakfasts, sometimes for holidays (fabulous for Christmas morning), and on a hot summer night they might even have been the main entrée!

Being something like pancakes, they were naturals with a topping of sliced strawberries or sweetened blueberries. Since blueberries are a favorite fruit- this is the way I would like to make the presentation of our family’s favorite blintz recipes to you.

The best blintzes are made with very thin, egg enriched crepe batter, and filled with a wonderful soft cheese filling, although there are a number of variations according to the locale of the cuisine, and the imagination of the chef. I hope you will try this recipe of mine, which I tweaked just a bit over the years. It is offered with high hopes of “Bon Appetit”! Enjoy!

Blueberry Blintzes For Brunch – Blintz FAQ

Blueberry Blintz

Blueberry crepes | Source: ateabutnoe on Flickr

A Dish Of Trivia

When can you fix blintzes?

Anytime, and I think they are ideal for brunches; especially since you can make them ahead and heat in a chafing dish.

I’ve served them as a light entrée for dinner, and of course, breakfast is the natural time for a serving of these filled crepe pancakes.

What are they?

They are crepe pancakes made with an eggy batter, cooked very thinly on a griddle or special pan. Then they are filled, often with cheese mixture, topped with syrup, sour cream, or whipped cream, and often times -fruit!

Yes, they are delicious.

What are their other aliases?

Russians make a variation called “blini”, Hungarians call them “palacsinta”, French call them “crepes”, and Jewish cooks call them “blintzes”. I always called them blintz, and it is a fun name, don’t you think?

Blueberry Blintzes

The Recipe You Are Waiting For

The batter for these crepes is very thin and care must be taken to cook them properly. The pan must be hot with not too much butter coating. Keep tilting and tipping pan to coat evenly. The result is wonderfully tender and delicate. I used to double the batter recipe for my family.

Do You Need A Special Pan? – Frying Pan Especially for Crepes

Do you really need a special pan to fry your crepes? In a pinch, you can use a regular griddle pan or frying pan, but if you want those perfect very thin crepes, I think you should opt for a crepe pan. It can be used for other frying and sauté tasks, but its premier raison d’etre is the preparation of an excellent crepe., and does double duty to make superb omelets.

Crepe Pans

Why does a special crepe pan make such fine crepes? It is the smooth surface and the sloped sides that eases the flipping and removal of the crepe. The size is a manageable medium size with a lighter weight than you might have on a similar type of frying pan.

So, the choice is yours, really. I would recommend getting a good quality crepe pan for its versatility as well as specialized usefulness in creating the blintzes that you are going to want to fix regularly for your family and guests.

Hungarian Palacsinta Recipe Variation

This is a recipe that people just love. Palacsinta are simply the type of crepes that Hungarians make! the difference is that they are a little trickier to cook, because of the extreme thinness. Hungarians are fond of filling them with both the sweetened cheese and more savory filling such as ham. ( Much in the way of French cuisine).

You can see that the amount of crepes made from it are for a crowd.

Normally, each person would eat two blintzes per serving.

Blueberry Blintz

Hungarian Crepes, Palacsinta

Tender crepes made the Hungarian way
Course: Breakfast
Cuisine: Hungarian

Ingredients

  • 6 eggs
  • 2 cups milk
  • 2 cups flour
  • ½ cup sugar
  • 2 teaspoon vanilla
  • ¼ teaspoon salt
  • ½ cup vegetable oil
Filling
  • 2 cup small-curd cottage or ricotta cheese (164 ounces)
  • 8 ounces cream cheese, softened
  • 2 large egg yolk
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon fresh lemon juice or ground cinnamon (optional) or ground cinnamon (optional)
Alternative Filling
  • 24 ounces Cottage Cheese Small Curd
  • 8 ounces Cream Cheese
  • 1 cup Powdered Sugar
  • 2 teaspoon Vanilla Extract
  • zest of one lemon
  • ¼ lb. Raisins

Method

Make the Filling:
  1. Place all ingredients in the bowl and mix well. Set aside.
Make the Crepes:
  1. Beat the eggs to lemon color, add milk, flour, sugar, vanilla extract and salt.
  2. Mix the ingredients with a wire whisk until frothy.
  3. Refrigerate about an hour.
  4. Preheat oven to 250°F.
  5. Use a medium crepe pan heated on moderately high heat . Brush lightly with the oil, pour about a 1/4 cup batter onto pan and rotate until pan is evenly coated. Cook lightly until done on each side, stacking them on a platter. Fill each blintz with about 1 1/2 oz of filling and roll or fold into burrito-like purses, making 7 at a time before transferring them to oven to keep warm.
  6. Transfer each blintz to a heatproof platter and keep warm in oven. Make 7 more crêpes in same manner, transferring to oven (rolled crêpes can be arranged side by side or stacked like logs).
Alternative Filling Instructions
  1. In a bowl put all ingredients except the raisins and mix well with a wooden spoon or you can use a food processor. When ingredients are blended well then fold in the raisins.
If raisins are a little dry, use a dash of Grand Marnier to moisten them
  2. Put about 1 1/2 oz of filling on the crepes and roll up. Serve with the blueberries on top

Notes

So many ways to vary the filling:
  • Use sour cream instead of cream cheese with the cottage cheese filling.
  • Add small amounts of ground nuts, or more lemon juice to the cheese filling
  • Skip the dairy and fill with your favorite jam.
  • Use a dry pot cheese instead of the cottage cheese.
  • Fill with nut filling

What is Turkey with all the Trimmings?

What is Turkey with all the Trimmings?

Thanksgiving turkey with all the trimmings is a meal which features a roast turkey accompanied by numerous side dishes and condiments. This menu is the favorite for not just American Thanksgiving, but Christmas feasts, as well.

  • Stuffed Turkey: Stuffing or dressing comprised of starchy, soft fill for the cavity of the bird. Made of bread cubes or rice cooked inside or outside the turkey. It often has minced vegetables, herbs, added. It can also have fruit or another food such as oysters or chestnuts.
  • Sauces: Cranberry sauce or relish is traditional. A gravy, often made from meat juices is made for moistening the meat slices, potato side dish, or the dressing (aka stuffing)
  • Vegetables: Potatoes which are usually mashed, but may be roasted, carrots, Brussels sprouts, or roasted root vegetable mix. Sweet potatoes are popular, roasted or mashed. Corn, often in a pudding or soufflé is popular.
  • Other breads: yeast rolls, cornbread may be offered
  • Desserts: Pies (pumpkin, apple) are most common
  • Giblets:Organ meats like the neck, liver, heart, and gizzard, are often used to make stock for gravy. The heart and gizzard can be chopped and added to the stuffing.

Goulash was originally a camp dish in the Old Country

Church Cookbooks, Immigrants Legacy

These spiral bound recipe collections aren’t the popular fund raising project they once were. Perhaps reflecting the fact that we aren’t the avid home cooks we once were. I can’t remember the time I swapped recipes face to face with a friend. It must have been a couple decades ago.

Now I get all my new recipes on Pinterest. But if you want a slice of how that important center of life, the kitchen, might have smelled and tasted when your grandparents came to this country… try looking through some of the old Church fundraising publications that featured the Ladies favorite foods.

Ethnic cookbooks published by immigrants of old were the repositories of their favorite everyday recipes. Some locally renowned home cooks of excellent ability and reputation, contributed the own rendition of many common dishes.

There were several paprikash, stuffed pepper and stuffed cabbage variations along with the famous goulash.

My Grandmother’s Recipes

Of course, the culture of the church would be reflected within the cookbook they produced.

As I peruse my Grandmother’s cookbooks, I come into contact with examples of fine Hungarian home cooking. She was the wife of a Hungarian Reformed Church Pastor, and one of her very favorite things in the world besides playing the organ was cooking!

Sadly, I rescued only a few of her many, many recipe books, but I had some of her hand written ones, from swaps with friends. And the thing is with some of these cooks of a bygone time, especially Hungarians, is that they never divulged their very best recipes. It was like pulling eye teeth. But my Grandmother (being the Reverend’s wife and all) managed to lever out a few.

Hungarian Church Recipes

The story of these collections reflects something else going on in the culture of the offspring of the immigrants who originally baked and cooked according to their traditions. Along with everything else in their lives, they became Americanized.

Ingredients Weren’t Always Available

If they couldn’t grow it here, there might have been need for substitutions. Different foods became available, and inventive home cooks added them. Variations of old world foods were as widespread as the adventurous immigrants.

Le Creuset Enameled Cast Iron Signature Round Dutch Oven, 5.5 qt., Cerise

You need a Dutch oven- it is a basic pot for cooking so many dishes to perfection. I own a Le Creuset and it is my absolute favorite cooking pan of all time. Mine is a brown color which tells you it is vintage, but this cherry one is gorgeous. What I love about these is the enamel coating over the cast iron which makes cleanup so easy, and the beauty of it allows it to go straight to the table. Great for simmering stews, soups, and one pot meals.

Cultural Cooking for American Tastes

This worked both ways, the flavors and recipes of a culture were modified and the American standbys received some tweaking of their own.

I see this clearly in the Church cookbooks which by and large are proudly presenting some family specialities, but also some of the food favorites of the day. For instance, The Dorcas Guild published a cookbook that starts out with Deviled eggs and Moss cheese ball (Bleu cheese rolled in chopped pecans), but then gives some favorites such as Kocsonya (jellied pigs feet) and Majas Nokedli (liver dumplings) and no less than three recipes for Csörōge which are my very favorite “cooky”.

Served Over Medium Wide Noodles

C.C 2.0 on Flickr | This is how I like it: over noodles.

Ingredients
For this dish, you add what you have to the mix. Do you love kohlrabi? Add that! Or chopped fresh sweet peppers, carrots, parsnips… you get the idea. Use the given recipe as a base.

Americanized recipes call for some catsup, and Worchestershire sauce. I like those additions, personally, because they make up for the loss of flavor we give up when we use leaner meats (fat gives flavor).

One Pot Meal

Cook everything in a large, heavy pot. A dutch oven is ideal.

You can add potatoes or make your own dumplings to add right into the pot, as well, although I usually cook noodles separately and serve the goulash over those.

Stewing, Slow Cooking Is Best

Prep time: 30 min
Cook time: 3 hours
Ready in: 3 hours 30 min
Yields: Serves 8

Use What You Have

  • 2 lb. Beef, Chuck or Round
  • 1 cup Onions, chopped
  • 2 cloves Garlic, minced
  • 3 Tbsp. Cooking Oil
  • 3/4 cup Tomato Sauce
  • 1 tsp. Vinegar
  • 1 tsp. Brown Sugar
  • 2 stalks Celery, chopped
  • 1 Parsley Root and Greens, minced
  • Black Pepper, to taste
  • 2 tsp Salt
  • 2 1/2 tsp. Sweet Hungarian Paprika
  • 1 tsp. Dry Mustard

Method

  1. Brown beef chunks in the 3 T. fat (you choose the type of oil for your taste – regular vegetable oil is typical, although I have been substituting virgin olive oil.
  2. Add onions and garlic, stir and cook until softened.
  3. Mix together the spices, salt and pepper, and everything except the vegetables, add to meat.
  4. Add 2 cups water and bring heat to simmer. Add vegetables. Simmer about 2 to 2 1/2 hours
  5. Some cooks add a flour and water mixture to add thickening. Others add bread crumbs. Still others add only some homemade dumpling noodles later in the cooking (like the chef in the video at the bottom of this page.) I add 2 Tablespoons flour dissolved in 1/4 cup cold water. After addition of flour be sure to cook for long enough to thicken and lose the “raw” taste of the flour. Alternatively, add a roux to thicken.

Tips for Hungarian Paprika

I was cooking one of my favorite Hungarian dishes for my son and his supply of Hungarian paprika was outdated. When it turns dark and is out of date there is little flavor. He had grocery store paprika and a smoked version, but the flavors do not yield the same results. I had to make a special trip to obtain the real thing.

When storing your genuine Sweet Hungarian Paprika, consider refrigerating it if you won’t be using it in a reasonable amount of time.It will last 3 to 4 years when stored properly.

  • Store in a cool, dark cupboard, away from direct heat or sunlight.

Fresh Hungarian Peppers, Test For Hotness

Add fresh Hungarian (AKA “Banana”) peppers. This type may range from sweet and mild to moderately hot. If spiciness is not desired, taste test the pepper before adding to your dish!

Don’t Change This

The source of the paprika spice.

Not if you want real Hungarian flavor, at any rate.

The paprika tastes different from other kinds because of the climate and soils of Hungary.

The Paprika Must Be Hungarian

There are sweet, and hot types, but PaprikaHungarian paprika has a particular taste that nothing rivals. No substitutes, please. Regular grocery store paprika will leave a slightly bitter aftertaste. Look for “Sweet Hungarian”. You can also order it online.

I include a table for the various designation of paprika flavors, but I usually use the Delicate. The others tend to be harder to find, although you can find almost anything on Amazon.

What Are You Waiting For?

Make it for your family today! It will become a favorite.

Remember:

  • Use real Hungarian Sweet Paprika, never a substitute
  • Make the beef base, then create your goulash with your favorite stew vegetables
  • Don’t add the paprika during the beef browning, add it with the liquid. (paprika must not burn)

Are You Ready For A Comforting Beef Stew?

This is no run of the mill beef stew, and it is the paprika and the method that sets it apart. Trust me, this is real comfort food. Make it into the perfect meal by baking some homemade bread to serve with it, maybe instead of having it over noodles.

Are you ready to make this recipe? I hope so. And it is good enough to serve to friends at the bowl game get together, or have some simmering on the stove during busy holiday time.

Hungarian Cowboy

csikós cowboys

The csikós is a horse-mounted herdsman of Hungary.

Hungarian Goulash

This is probably the most well known Hungarian cooking term. The original word is spelled “Gulyas” and it is something between a stew and a soup, but always highly flavored with paprika.

The Hungarian Cowboys and shepherds made it in a big iron pot cooking over an open fire out on the Puszta.

There are so many ways to make this dish that you just have to try a few to see which type is your favorite. I suppose it is the Hungarian version of chili. Hearty, easy to make, and flavorful way to cook beef stewmeat.

In our vernacular it also came to mean a hodgepodge or jumble of elements (1)

Trivia From Out On the Plains

In Magyarol (Hungarian), “gulyás” means “herdsman” which gave the name to this quasi stew/soup we call goulash. Goulash is the phonetic way English speaking people pronounce the Hungarian sound for  “s” . This is an “sh”  sound to us. The herdsmen on the Puszta the cooked their meat in cauldron over an open fire. (The “Puszta” or open plains.) Most often beef was the main ingredient. Today we can use the recipe for any stewing meat we choose.

Why was paprika not added to the recipe for goulash until the 17th-century?

Because the plant was brought to the country by the Turks only in the 16-17th centuries. It was the herdsmen on the plains who first introduced it into their cooking… then the peasants got wind of it… and finally, the Aristocrats caught on that this was a delicious flavoring.

Not until the 19th century was the production of paprika refined enough to control the amount of hotness in the spice. Kalocsa and Szeged are the two main areas still famous for their paprika. People from those areas were instrumental in improving the production process that results in the best paprika in the world.

How Accurate Are Self Published Recipes?

Obviously, they don’t have the same professional checking and testing that a Cook’s Magazine might, but overall I found that they produce a quality food product. Missing is the nutritional info, sometimes the baking pan sizes, and occasionally the details of cooking method.

I guess those old time cooks took for granted that we would know all that.

Because of the tested quality of a professional cookbook, we should look over the amateur recipes of a personal collection with a bit more scrutiny. Although the Hungarian ladies had much more trustworthy recipes than the ones published by my own Church (which shall remain unnamed).

My advice: test a recipe before serving to guests.

This Recipe

That said, this recipe is so simple, basic, and forgiving it will turn out well (and become one of your favorites) no matter what – as long as you follow the basic directions.

Cakes and baked goods aren’t quite so forgiving!

A Word On Church Cookbooks

Church Cookbooks often hold sayings and poems, along with sweet little line drawings. Occasionally they have mistakes or repetitions of the same recipe. However, nothing is better for giving you a taste of the time and the interests of what often was the last bastion of the old country culture is ther loved, but strangely new world.

Authentic Goulash

The video gives the basics on Hungarian Goulash

There are a number of videos online, but this one is easy to follow with all the basics. Forget about the advice that you can use Spanish paprika.

Some people like a bit of fire added with jalapeno pepper.

This video advises caraway, while others say cumin. I don’t usually add either of these.

How to Roast a Chicken for Many Meal Possibilities

How to Roast a Chicken for Many Meal Possibilities

Easy roast chicken yields more than one meal. Originally, I published this article in 2011 with all ten recipes plus the roast chicken one included. I think that format is awkward, and this post is dedicated mainly to instructions on roasting the best possible chicken. These recipes are a variation or two on the basic method.

The remainder of recipes are listed, and linked, so that each one is easy to access and print for a gallery of great meal possibilities. You won’t miss out on trying all ten.

Easy and Tasty Meals that People Love

Roast chicken is one of those simple, basic recipes that every beginning cook can master, but sometimes the way you flavor it can make this dish into something entirely new. Whether you buy one of those convenient roast chickens at the grocery store rotisserie or roast your own according to my easy directions, I will give you 10 (count them!) easy and delicious recipes for using roast chicken as a base or as a way to put leftovers to use.

Chicken is still one of the most economical of meat entrees and almost everyone likes this choice, which makes it great to cook for picky eaters and potlucks.

A few new ways to roast the bird, and other recipes to use the meat in a variety of ways await. Let’s start in on choosing, and how to, roast that basic chicken.

First You Have To Roast The Chicken

Make the best roast chicken ever. After you’ve tried my recipes …branch out and amaze your family with your repertoire.
One of the great secrets when you first start to cook is how easy, delicious, and versatile roast chicken can be. From a basic roasted chicken are innumerable dishes to serve: herbed, sauced, in salads, in casseroles, all sorts of ways. It is very economical, too.

The absolute simplest directions for roasting your chicken are included here. For a few words of how to make it best, read on.

To get the most meat from the process buy a chicken called a “Roaster”. Any young whole chicken will do, but a roaster is a larger chicken with tender meat, usually between 5-7 pounds each. Yum!

Chickens are graded, and almost all chickens sold in your grocery store are “USDA grade A”. That means they are supposed to be firm, full breasted, meaty, no blemishes, no broken skin or broken bones. What are the other type of chicken designations? There are “broiler” and “fryer” chickens which are less than 6 pounds, normally. They can be roasted as well, they are just a smaller size and younger than the roaster chickens at the time of slaughter.

or buy one of those delicious rotisserie ones!

If you buy a rotisserie roasted chicken from your grocery the work is done for you and I think it works out to be more economical in many cases. Places like Sam’s Club and Costco sometimes use the larger roasting chickens, groceries such as Krogers often offer the smaller sizes. They all taste good to me.

For the recipe ideas you will simply need the chicken to cool enough to remove the meat from the bone. Then start cooking one of the ten ideas here!

Homecooked? Pro and Con

A few reasons that I can think of to do your own roasting are:

  • you can use organic meat if you wish,
  • get larger sizes of roasting chickens, or even a capon.
  • You can be sure of the quality of the meat, and the sanitary conditions of preparation.

A ready-cooked bird is so easy that time-consuming home cooking is almost not a consideration, and has only a small edge because of cleanup, etc.

There you have the pros and cons of the ready-ooked and the homecooked.

Roasting the chicken is so easy that you will be surprised. Try it at home.

Capon:What is it?

A capon is a castrated rooster. Good roasted.

Easiest Steps to Roast a Chicken

– A Four Step Program –
There are many recipes for all sorts of roasted chickens, with flavors from herbs, with vegetables, glazed… but this is the very basic recipe and it will give you excellent results. Roast chicken is good like that. One of the easiest meals possible.

TIP:

Broil for 10 minutes, before placing in 450° oven for 20 min.The chicken will be juicier.

My Instructions for Juicy Roast Chicken

Roasting Time and Temperature

Roasting times and temperatures can vary. Chef Emeril says 500 °, others say differently. If the heat is higher, the time cooking is lower. The oven type makes a difference in both time and temperature.

Roast chicken isn’t picky, and you will get a good result no matter which recipe you follow, but some of the tips and adjustments in recipes will give you GREAT results. Try the above tip: broil, then roast.

  1. Rinse the chicken inside and out under cold running water
  2. Dry it thoroughly, I use paper towels. Then get a good vegetable oil, I use Olive Oil, rub completely over the chicken.
  3. Salt and pepper the chicken inside and out. I use sea salt and cracked pepper. Now is the time to add poultry spices or a chicken spice rub, but it is not necessary.
  4. Roast your chicken in a roasting pan at a moderate heat like 350 degrees. Time is according to weight, but figure about 2 to 2 1/2 hours. The golden brown roasted skin and clear juices will indicate that it is done.

My Little Secret: sometimes I just douse the bird in Wishbone Italian Dressing before roasting. It is super delicious. Occasionally basting a few times while it is cooking.
